These meatless kofta patties can be served over rice, salad or in a pita with your favorite veggies and condiments, such as tzatziki sauce or lemon-tahini dressing.
TIP: Patties can be made ahead of time and refrigerated for later use. The flavor builds and intensifies over time and may even be better the next day.
Ingredients

1 pack (8 oz) Original Plant Protein Mix

1 small onion, finely diced or grated

½ cup fresh parsley, chopped

½ cup fresh mint, chopped

4 cloves garlic, minced

1 ½ teaspoons allspice

2 teaspoons cinnamon
-
2 teaspoons cumin
-
1 teaspoon smoked paprika

1 teaspoon salt
-
1 teaspoon black pepper
-
1 lemon, juiced and rind grated

½ cup water
-
Olive oil for pan frying or grilling
Directions
In a bowl, combine one package of Dojo Fresh’s Original Plant Protein Mix with dry spices – allspice, cinnamon, cumin, smoked paprika, salt and black pepper. Blend dry ingredients together.
Gradually add water to the dry mixture while stirring frequently with a fork. Note: the mixture may still look dry, but additional liquid will be added in the next step.
Add 1 tablespoon grated lemon rind, ¼ cup lemon juice, onions, garlic, parsley and mint to the mixture and knead until the ingredients are blended a form a dough.
Allow mixture to rest for 5 minutes for the flavors to infuse. NOTE: if the dough is too wet (feels soft or easily tears apart), add 1 teaspoon of the plant protein mix, knead the mixture and let it rest for a few minutes. Repeat, as needed, until the texture is sturdy with a little bit of give.
Divide mixture into equal portions (number of portions is dependent on desired portion size). Shape each portion into long, flat patties for even cooking. The patties can also be shaped on skewers.
Heat griddle or pan over low to medium heat. Lightly brush the griddle or pan with olive oil. Add patties and cook each side thoroughly for about 7-8 minutes on each side. Brush each side of the patty with olive oil, as needed.
Remove patties from heat and allow them to rest for a few minutes. If desired, finish with a squeeze of lemon before serving.
Recipe Note
Note: ensure that the patties are cooked throughly. As an alternative cooking method, patties can be steamed for 30 minutes and then grilled for crispness.
