These baked chocolate peanut butter protein bars are soft, chewy, and satisfying — somewhere between a cookie and a brownie, but designed as a protein-forward snack. Made with our Chocolate Protein Pancake Mix, they’re hearty, lightly sweet, and perfect for breakfast, post-workout fuel, or an on-the-go snack.
Ingredients
- 1½ cups Dojo Fresh Chocolate Protein Pancake Mix

½ cup peanut butter
- ⅓ cup maple syrup
- ¼ cup plant-based milk (soy or oat work well)
- 1 tsp vanilla extract (optional)
- ¼ cup dairy-free chocolate chips (optional)
- Pinch of salt (optional, if you like a sweet-salty finish)
Directions
- Preheat oven to 325°F. Line an 8×8 pan with parchment paper.
- In a medium bowl, stir together the peanut butter, maple syrup, plant-based milk, and vanilla until smooth.
- Add the Chocolate Protein Pancake Mix and a pinch of salt (if using). Mix until a thick, moldable dough forms. Fold in chocolate chips if using.
- Press the dough firmly and evenly into the prepared pan.
- Bake for 18 minutes, until the center is set and the edges feel lightly firm.
- Allow bars to cool completely in the pan before lifting out and slicing into bars.
